Italian cuisine, often imitated all over the world, is thought of to be a national cuisine, but it is not so in the traditional sense. Not only does Italian food have its own specialities from region to region, it also changes depending on the season. One of the more popular distinctions is Northern and Southern. In Northern Italy you will find more cream and cheese based sauces, while in Southern Italy you will find tomato based sauces. Also, coastal northern and central regions serve as sort of a bridge between Southern and Northern Italian styles of cooking, using pastas such as tortellini and ravioli, which are great with either a cream or tomato based sauce.
